可乐薯条加快脑退化
【明报专讯】美国医学期刊《Neurology》刊登一项研究指出,可乐、薯条等加工食物
会加速大脑退化,相反含维他命的食物和鱼则能延缓大脑萎缩,有助预防脑退化症。
香港脑科专家认為,研究有参考价值,有助日后深入研究脑患病风险。
含维他命食物缓脑萎缩
美国奥勒岗健康与科学大学早前分析了104名、平均87岁的健康长者与脑退化症患者的
血液样本,并在上周公布结果。
结果发现,健康长者的血液中,拥有较多Omega-3不饱和脂肪酸与维他命B、C、D和E,
他们在记忆力和思维测试中表现较佳,反应能力也较好。相反,脑退化症患者血液则有
较多反式不饱和脂肪酸,最常见于加工食品,如蛋糕和油炸食物。
研究人员随后扫描42名长者的大脑。结果显示,血液中维他命和Omega-3不饱和脂肪酸
水平高的长者大脑容量更大,相反血液中反式脂肪多的长者大脑容量小。
研究员认為,反式脂肪不仅有损心臟,亦损大脑,建议大眾可从调整饮食结构,延缓大
脑萎缩,保持思维敏捷。
英国脑退化症研究中心表示,数据可看到血液中的营养物质和脑退化症相关,但实际影
响程度则需要更深入研究,才能确定饮食是否对病症有帮助。
港大内科学系脑内科教授张德辉表示,已有研究确认中风和脑损伤会增加脑退化风险,
而反式不饱和脂肪酸亦会增加血管风险,造成如发炎等脑损伤。
但他认為,研究如以追踪模式进行会较准确,长者或会因本身出现病患、减少运动,或
会因照顾者提供食物不健康,影响研究结果。
香港营养师协会会长林思為表示,长期进食加工食物会令进食健康食物的机会减少,香
港有近8成市民经常出外午餐,会增加进食加工食物风险,建议多吃蔬果平衡。
