前面包，往往在主菜上来之前已经被面包填饱肚子了。今天周末在家，网上搜了个方子
开始尝试，结果还不错。孩子们（包括老公）都说跟饭店的一个味道，一口气吃了一大
半。（色泽还差了不少。）
做法：
1。一大勺干酵母，一大勺糖，和一杯温水搅拌，放两分钟。然后放入一大勺化了的黄
油，一小勺盐和一大勺切细的rosemary（我就用了大半勺干的）。
2. 倒入两杯面粉，使劲揉10分钟。非常粘手，不管它。实在太粘了再加半杯面粉。
3. 盖一块纱布，发酵到两倍大（四五十分钟）。
4. 揉面，排出气体，然后再baking 盘上抹橄榄油，把面团整形放好，二次发酵20-30
分钟。（原方子是要分成两个椭圆型，我懒，直接扔进去了。）
5. 表面洒一点点海盐，rosemary，在预热到375F的烤箱内烤20分钟（如果分成小份烤
，适当减时间）。我看了review后分两次刷了点蛋白水（据说能帮助长crust）。成品
表面
坑坑洼洼的，不知道是否跟这个有关。
6. 出炉后刷上一点热黄油。

不解什么叫肉本身不好处理。我家的 grill pan 还是
经常有用到得。Grill pan 最好和 gill pan 配套的
pressing kit 一起用，上下一起加热。
和一般的平低锅差不多，就是有棱，不会贴着大片肉
糊掉。
然后火候看经验，主要观察两点，一个是肉的硬度。
太软就是还没有熟，太硬就是熟过了。
还有一个是出水的速度，这个有 pressing kit 比较
容易观察，因为 pressing kit 压在上面帮助肉接触
锅和压水出来，压力比较一致。如果水开始收少，那
就差不多了。等到肉没有新的汁水出来那就是过了。
注意起锅之后，要等肉凉一下再切，汁水会往回收。
切太早肉里面就干。起锅以后，肉在盘子里，8-10 秒钟
以后表面用红外温度计量仍然有 70C， 那就是
足够熟了。 65C 就是里面还会有血水。
牛肉最重要得就是汁水的控制，这个要一次加热到合适
得温度。起锅早了，拿出来盘子发现太多血水再放回去
锅去就很容易把肉完全煎干掉。多次加热肉内部的温度
上不去，等上去了内部汁水就干了。
所以这个游戏的技巧就是在于如何把牛肉内部温度加热

不知道你说的先煎后烤是如何操作，如果是入烤炉的
话，我试过，没有 grill pan 一次烤好的效果好，肉
