第一次做蛋糕不要改任何的recipe
首先你完全都不知道里面的各種成分是做什么用的
你摻了面粉,那么baking powder的比例就不夠了
發不起來很正常
而且你也不熟悉你的烤箱的實際溫度
如果不用比較確定的recipe,你根本無法知道烤箱的實際溫度到底是比現實溫度高還是低
這個是很顯然的baking powder不夠以及沒有烤熟加在一起
如果真的想知道蛋糕有沒有熟透
拿出來之前用一個木棒插到中心
拿出來的時候是完全干凈的就差不多了
但是這個只是適用于大部分的蛋糕而已
你以后烘培多了,就知道有些蛋糕不能用這個判別
總之一句話
第一次做,recipe的一個字都不要改

疼就没买。请教下,面粉一定要用筛子筛到蛋黄里去吗?要是不用,做出来的效果能差
多少呢?

1.五个蛋加一杯面会不会很难搅拌? -Not at all. I used approximately 1 cup of
cake flour this time, because I was not sure about this new recipe. So I
added a little bit more flour for "safety". Normally I use 90g~100g cake
flour for the 5-egg recipe.
2. 泡打粉有必要吗,还有塔塔粉有必要吗? - 泡打粉 is for a softer, lighter
cake texture. If you don't add 泡打粉, I think it is totally OK. Or you may
add one more egg white for the same result (as I did in this recipe). 塔塔粉

是按照recipe里面的顺序放的
唯一的区别大概是人家用的美国店里常见的那种黑红色的raisin和cranberry
我家里没有,找出一带中国店买的青绿色的葡萄干
烘烤时间也不长,425度13分钟,跟recipe一样
面的部分都很好,颜色也不错,就是葡萄干好像有点糊,尤其是露在表面上的几颗
请问是我用的葡萄干不对么?
还是应该先烤面,烤到一半在顶上洒几粒果料再继续烤?(recipe里倒没说)

You could use egg white of course. I personally don't like the texture. I
meant, I actually hate the texture.
There is no THE RECIPE for tiramisu, not even in Italy.
You can do whatever you are happy with the recipe and I never follow any
recipe precisely.
For someone who's lazy like me... :-) Sometimes what I do is just to dip the
lady finger in coffee, mix with mascarpone cheese, sugar and a bit of any
liquor in my hand. Put in the fridge, waited for hours, serve with cocoa
powder. I gotta tel

超市买的蛋糕粉,一盒烤24个小蛋糕的那种
严遵recipe,前两次用一次性的锡纸烤盘,好好的;后来换成金属烤盘,烤了两次糊了
两次
自己分析原因如下:
1. 时间太长?recipe上说18到22分钟,我只烤了18分钟啊
2. 温度太高?recipe上说350F,我就用的350F啊
还是什么其他原因?请达人帮忙分析分析。。。

多谢捧场,菜谱有不少,可以综合根据有的材料进行变通。我在蟹肉里混合了培根粒,
奶油汤是自己加的,里面有白酒,鸡汤,香菜,蘑菇烤的有点干的话,吃的时候可以用
勺子撒一些汁在上面。

从小就很爱吃的菜
不喜欢很甜,以前我家做的是1糖2醋3酱油
这边猪肉很腥就一直用爱厨的方子(跟你的一样),然后糖醋掉个个儿

感觉我的问题就是后来的揉面不够,就是揉了2分钟,所以不够劲道分层。 下面这个
panettone也是要揉10多分钟的。 不过他的方子里面是不放yeast而用baking soda,所
以结果就是 scone-like texture 的 Pannetone Genovese。

recipe 其实跟机器做的recipe一样, 网上可以找到很多。
我个人常用的recipe:
heavy whipping cream: 1/2 cup
milk or yogurt: 1/2 cup
mango puree or blackberry: 1/2 cup
sugar: 3-4 heaping teaspoons
1. whip the cream
2. add fruit, milk, sugar, whip more
3. put it in freezer, stir every 40 minutes until it is set

IT公司面试时所说的文化,其实就是白人nerd的"僞大师"文化。
IT公司,你总能看到一群人(白人居多),这些人把coding看做生命的一部分,每天把
"some really smart people did xxx" 挂在嘴边。然后写个板砖的活还自以为很了不
起没事儿就来一句"cool!"。其实干的都是没技术含量的活,也就是把人家的recipe拿
来然后最多加点自己的小trick。这些人,非常浮躁,以为自己写几行代码就可以改变
世界,然后一天憋球的喜欢给人耍宝来慰藉自己的存在感。这些人最多算个码工但是总
觉得自己是大师。真正的大师是发明recipe的人,而不是follow 或者小改recipe的人。
为什么IT公司这种干着低贱没技术含量的活,但是以为自己很了不起的人很多呢?个人
认为其实和计算机的特性有关。所有的工程类项目,只有软件开发能够独立完成并且立
即见效(编译成功,运行成功),所以这些人就可以完全活在自己的计算世界里面为所
欲为:只要敲几行代码,我就可以让计算机如何如何,发号施令,做trick,感觉就是
一个god,所以很容易让这些人产生幻想认为自己就是世界的主宰。

推荐一本baby food的书,里面把每天宝宝食谱和做法都列出来了,很方便。我家宝宝
刚开始吃辅食时,我就是按照这个书做的,不用每天操心做些什么,按照书上写的弄就

Amazon上黑五左右历史最低价$150入的,当时家里有一个很老的免费的1磅面包机,免
费是因为原来住Apartment的时候楼下的老美搬家扔出来的,我们就拣回来了,虽然用
过的但是状态不错大概也就用过几次,拣回来一两年我一直没时间用,后来又一黑五在
家开始捣腾,在文学城和网上找了各种Recipe都不是很好,意思就是做是做成了,但是
不好吃。看网上有人把这个夸得一朵花儿一样,最低价就入,收到第二天就动工了,结
果第一锅按它带的Recipe出来的完全失败,面都没和好,发就不用说了,其实上面有个
Window是能看到的,结果我这个没脑子的婆娘根本没有管,出来直接扔了,然后开始上
网做研究,发现很多人都抱怨不能按它的Recipe来,于是又来一次,这次确实成功了,
看着样子也不错,拿出来一吃,跟我免费的面包机没什么区别,再来一次,再来一次,
还是一样,于是自己花运费把它退回Amazon了。我想说的是,我不是做饭高手,但是我
觉得这个产品严重性价比太低,文学城上的大拿,基本上都是用面包机和和面然后还得
进烤箱烤。所以打算买面包机的同学,二三十Walmart,Sears的就可以了。实在钱多得

哈哈哈哈~~~骄傲自满轻飘飘~~~一共灌了20lbs的肉~
recipe如下
Recipe来了
以10lbs肉为基准,LZ用的肥瘦的比例是3:7.
肥肉就是在大华买的纯肥肉,瘦肉就是costco买的pork shoulder一大包,1.69一磅,
不贵也实用的说
所有的肉都切成丁,大约大拇指的一半大小吧~~~
由于LZ懒,懒得上电子称,所有的量都是拿量杯估摸着来的。
1/2 cup的盐,1/2 Cup的辣椒(LZ在华人超市买的四川产的辣椒面)《LZ家喜辣,所以
辣椒放得比这还多些》,1/4 cup的花椒面(四川背来的花椒面,一阵扑鼻的椒香啊)。
大约3小勺的耗油,1/8 Cup的糖。
1/2 cup的白酒(放酱香型的白酒最好,LZ莫有,就放的costco的最便宜的那种Vodaka
。)
哦对了,还放了1/4cup的黄酒。
最后,把所有的调料和肉混均匀之后,腌制12-24小时。网上很多recipe说不用腌,但
是LZ觉得腌腌更入味~~~
由于配方的时候没照相,现在补几张LZ的量杯们吧~~
注:请大家根据自己家口味自行调整哈,料酒可放可不放,关键看肉的湿度,不能过多
水分哈~~
