就说这个鱼吧，
简单点，
清蒸，
要买活的淡水鱼，保证新鲜。一般买来就帮你杀的，
鱼则 鱼。
用刀划上条条，大概一面6，7条，宽条，不是长条，
然后把葱，姜，切丝，
塞鱼伤口里，
两面都塞上，
放盘子里，
倒入生抽，料酒，
需要不少，只要别漫出盘子就好。
然后置入已经烧开的水面上，盖盖蒸，
大约10分钟，熄火，
闷会，上桌。
一次吃完。
吃剩下的酱油料酒可以下次红烧用。 |

50mM KCl, 2mM MgCl2, 5mM EGTA,1mM EDTA, 100mM Sucrose, Plus cocktail of

Triton X-100 is for lysis of cell membrane, Sucrose is for the stablity of

我们是用小鼠胚胎的软骨和骨头染色的protocol。染软骨的话只用Alcian Blue即可。
最后胚胎用BABB处理就会变得透明。BABB危险，而且会腐蚀显微镜，使用时要小心。很
多动物的胚胎都可以用类似的方法染骨头（红色）和软骨（蓝色）：鼠，龟，蛇，鸡，
鱼，蜥蜴，变色龙，蝙蝠。。。而且都很漂亮！

我烤了个佛卡夏，家里有新鲜的迷迭香，用的是买的面包面粉袋子上的做法，应该不太

1又1/4杯温水，激活4克干酵母，加2tsp盐，1tbsp糖，2tbsp植物油（我放的橄榄油）
揉匀，发酵至2倍大
在抹了油的烤盘上用手轻压成半英寸后的片，按出小坑儿，撒上6tbsp切碎的新鲜迷迭
香（如果是干的，用1/3的量）和2tbsp的parmesan，二次发酵至体积翻倍
375F烤20-25分钟即可

酥皮相当赞，很香，感觉比国内买的还好吃~芝麻吃起来特别香哈~
馅也很好吃，不过虽然很好吃，但是不像国内卖的那种馅，不知道为啥。（这个馅儿味
道真的很好吃的哈。。不过俺想吃国内那种口感的。有高人指点下国内那种馅是啥做的
不？冬瓜？）
2）玫瑰蛋糕
主要是为了试验一下taobao上买的玫瑰蛋糕模子~
按8寸戚风的方子做的，烤的时候温度适当放低了一些，从结果上看还不错哈~~虽然不
能细看~不过那是我水平问题造成的，与模具本身无关O(∩_∩)O~
搅拌的时候不够充分吧，还有些大气泡没有消，所以最后就成了图上的坑坑洼洼了~不
过还有些坑是脱模的时候被我自己撕坏的 |

Muffin是我喜欢的早餐点心之一。许久没有做带巧克力的点心了，也许是节日气氛的影响，突然很想吃巧克力，我通常喜欢吃60%--70%Cocoa的黑巧克力，所以就把70%的大块黑巧克力掰成小块和在面团里。这款小蛋糕趁热吃(或是用微波炉热10秒钟)，黑巧克力融化开的味道非常好。
虽然看起来步骤比较多，但做起来非常快，准备料大概要10--15分钟就好了。我通常Baking的习惯是把糖，油的量尽量减低但又不影响大体味道，所以我的recipe不像美式的那么甜腻。出于健康考虑有的recipe我也会换一部分普通面粉为全麦粉(1/4--1/2)；把whole milk换成1%，2%milk；heavy cream 换成 fat free sour cream，有的时候要实验几次才会找到合适的比例和口味，所以一定要写下来和朋友分享。

家里倒是奶香四溢，我和LD吃了一片，虽然卖相难看，但是毕竟是第一个面包，还是觉
得挺好吃的^_^
但是。。。面包的结构和高庄馒头类似，太干太硬了：（（（
总结我们的问题： 1.5lb的基本面包。买不到奶粉，我们是牛奶来代替水，加recipe里
面水的用量。用了一小包instant yeast,7g. 三杯all purpose面粉。但是牛奶是直接
从冰箱里面倒出来的，没有加热，是不是这就是失败的原因？
另外，因为是牛奶替代水，我们是不是要稍微加大一点牛奶的用量？或者再稍微加一点
水才能防止变得这么干？
或者还是因为面粉的问题，是不是应该买高筋面粉比较好呢？
最后，菜鸟恳请大家推荐一下，哪里有比较适合初学者看的recipe呢？ |

发帖数: 180 | 48 汤圆以前尝试过一次，没有成功，这次突然就开窍了。
黑芝麻糊是第一次做，算是成功了吧，不过因为从来没有炒过芝麻、核桃仁跟花生，还
有糯米粉，所以度没有把握好，炒的有点过了，不过用热水冲了以后，喝到嘴里的感觉
非常好，所以算是成功了吧。
另外再贴一个前两天做的面包，面包机做的，第一次尝试，成功
方子是yankitchen的：
1.汤圆，在最下面：

原料：
1包糯米粉
1又1/4杯水
1包椰丝
6大勺白糖（或依个人口味而定）
醪糟适量
做法：
将水加入糯米粉，慢慢的揉成糯米面团。
把椰丝和白糖分几次加入到coffee grinder里打成椰蓉。
包汤圆中国人都会的，我不啰嗦了。包好后烧开水，汤圆下锅，煮到浮起到水面即可。
可以直接吃，也可以加入醪糟，会多一层风味。
2.黑芝麻糊：

今天试做第一次，味道已经很象了，但就是汁不够黏稠。
我是用烤箱烤的，网上搜的recipe，比recipe上写的多加了一倍辣酱（不然不够味）。
我非常喜欢papa johns的buffalo wings，干干的，酱汁都粘在翅膀上，不知道我做的时

我喜欢加BUTTER在汁里面,
然后把汁倒上去,你也可以把汤倒进去收下汁在烤箱里用余温.
我也看有把薄薄的面粉倒在鸡翅上烤,然后这样汁也会粘.
