Calphalon 的是把铝阳极氧化(hard anodized) ,然后teflon 渗到氧化铝的空隙里面
去,
也是一个强化涂层的方法
中学做过铝阳极氧化着色是一样的过程

为啥要买teflon的锅,一个all clad stainless chef pan,一个griswold cast iron
skillet啥都能干。涂层再牢也是几年寿命,不耐高温。以上两个锅可以用一辈子。

If you have to oil it every time, there got to be something wrong. Maybe you
didn't wash it right.

忘了在哪里看到的,
说铸铁锅其实也不好,因为他是多孔的结构,用的时间久了就是靠GREASE腻住了空,所
以不沾,但是这些GREASE反复加热也容易生成治癌物质

大家给推荐个不粘锅吧,我有铁锅炒菜,但是想要个不粘的煎鱼煎鸡蛋。Calphalon

no, calphalon is simply expensive for nothing
at least the Cuisinart that I have is pretty good, much cheaper.
seriously. on the first day, I forgot it on the stove, and had the
food burnt in the pan, (tofu skin) and it all stuck to the pan.
but I put it in water, and used wood chopsticks to scrape off, now it
works fine. I had a calphalon before, quickly turns sticking
I think my point on this is: no point to spend too much on the expensive
ones, they all go bad one day (1 -- 2years), just mak

you want the whole thing to be 3-ply ,
which is the all-clad line, or all-clad pro

agreed。我有一个calphalon,比别的(比如analon)一点都不好,
变成沾锅的时间更短,而且底很快就不平了,smooth top电炉用起来
很不方便。

kirkland我有一个,不行。
还是analon吧。他的12" stir fry原来amazon卖$40,
现在好像一直$50了。
