是故意在这装啊。英文就是比较精准，什么状态什么情况都有个专门的词来形容，比如
pan searing，pan fry,brown， braise ，saute，roast, bake。这些词让我用中文
来翻译，我都找不到特别恰当的翻译。每一个如果细细解释的话都能写不少，今天专门
来写pan searing，就是煎。
pan searing这个技术通常用在炖肉上。wait，我不是前面说煎肉吗？等我慢慢讲啊。
西餐和中餐炖肉有个很大的区别，中餐通常会飞水（飞水就是把肉在水里煮一下），撇
去血沫，而西餐基本没有这个处理方法的，他们的方法就是把肉煎一下，pan searing。
中餐飞水的时候一定要冷水下肉，然后把水烧开这才会收获大量的血沫。开水下锅的话
肯定收获惨淡，因为肉表面遇到高的水温就收缩了，把原本应该释放出来的血沫包在了
肉里。
而西餐不飞水，西餐在炖肉之前就会这样处理，pan searing。就是用平底锅把肉煎一
下。这样一来锁住肉内的水分，二来，表面焦黄的肉即使炖的烂烂的也会有一层酥脆的

生了一点，不过味道真是好呀！！
1. skirt steak撕去肥油，用蒜末黑椒芝麻盐油水腌上20分钟
2. 顺着纤维切大块（grill pan太小）
3. grill pan大火烧烫，每面1分多钟
4. 放着不动10分钟
5. 垂直纤维切片
味噌汤是很山寨很山寨的，豆腐切块加水煮沸，泡开的茶树菇丢几根，炖鸡剩下的白菜
也丢进去，味噌用水调开倒进去，就好了。
牛肉看着有点生倒进汤里捂了一会儿，还挺好吃的，口感相当的好 |

1. Generously coat tuna with Cajun seasoning. (you can replace Cajun seasoning with your own).
2. Heat oil and butter in a large skillet over high heat. When oil is nearly smoking, place steaks in pan. Cook on one side for 3 to 4 minutes, or until blackened. Turn steaks, and cook for 3 to 4 minutes, or to desired doneness. |

You could probably use this coupon during happy hour because it doesn't say
you can't. Happy hour is from 2-4 am/pm on weekdays and gives you half price
drinks and shakes.
also if you sign up for the eclub you get a free double steakburger and
