发帖数: 3416 | 3 从没想过自己也会在家做广式月饼，因为坦白讲从小就不太粉广式月饼的甜和腻。前段
时间网上晒月饼成风，想起来去年特意托闺蜜娇娇给我买了月饼模具，不远万里带到了
美国，觉得自己不动动手实验一下实在说不过去。于是花了几天时间在网上搜集了各种
做广式月饼的方法，才发现从熬糖浆，到兑枧水，到包月饼，到烤制，听起来样样过程
都很复杂啊！真等到自己动手做的时候，发现其实也没那么夸张，懒人嘛，总有办法偷
到懒的。
首先，熬糖浆是个技术活，参看各文献发现，糖和水的比例、熬糖的温度、熬制的手法
和防止结晶这些全都是差之毫厘谬以千里的。最要命的是，刚熬好的糖浆还不能立刻使
用，至少得放2-3周才能起到好效果，放置一年以上的就更好。天哪，即便我一切都没
失误的熬好了糖浆，等到它能用上也至少过了今年的中秋了。既然有许多北美的网友都
用实践证明其实美国超市买的很多糖浆都可以替代，虽然达不到自制糖浆的效果，不过
好歹人家也是糖浆，就果断放弃自己熬糖浆了！新手，能简点就绝不往繁了去是吧？哈哈
再者，这次的广式月饼做了两种馅，一种是红豆沙馅，一种是豌豆黄馅（穷乡僻壤实在
弄不到咸蛋黄和莲蓉，其实我最爱的是双黄莲蓉啊~）。... 阅读全帖 |

about 370g paste. I made 4 moon cakes with all date paste filling(80g each)
and gave them to 4 of my friends, then I wrapped the rest with some bean
paste, made another mooncake for myself, I shared that one with friends...
I probably will never make another date paste any more, it is too time
consuming. |

+ cocoa powder + cream + sugar = coconut paste ===>fill into your cookies,
pies, dumplings, cakes, whatever is sweet.
steam it + sugar + peanut oil + some other paste, can be yet another
mooncake filling if it does stick together. |

positive rate with the 1 hr glucola screening. I didn't pass the 1 hr, but
passed the 3 hr with flying numbers (no cheating whatsoever). but it is a
good idea to avoid high carb food like mooncakes in general whether u have
gestational diabetes or not. |
