monounsaturated fats 对身体来得好。
而且现在炒菜用的油（比如我用 extra light olive oil），都相当
纯。纯就更不容易 season。
而且现在家里炒菜的温度一般都比以前来得低，油烟对肺不好，相当于
吸烟。
All-Clad 是名牌，只要使用不超过 500F（手册要求），应该没事的。
如果要便宜一点，可以买 Kitchen Essential 的 Stainless steel
的，注意要全锅三层夹心，当中一层是铝的那种。那个 $100 就能买到，
但是有个缺点，是外层的 Stainless Steel 不是 magnetic 的。所以
不能用在 induction cooktop （电磁炉灶）上。All-Clad 的是 magnetic
的，可以用在 induction cooktop 上。
如果再要便宜，可以买 Stainless Steel disk bottom 的，也就是夹有
铝或铜的那层只在底部。我家大部分的 stainless steel 是 disk b |
