i wanted to say we have a long list but we want to focus on minimal/minimum activites (only the best ones worth our efforts).

the context is not in the sense of choosing among the core or the minor.
it's a list of various suggested activities for the holidays. we have to
pick up a few (definately not all of them), and make it happen. we lack of
resources and time, so we can only put efforts on 1 or 2 (minimal/minium/
selected) of them to work on. so i said we wanted to work on the minimal/
minimum activities...i guess minimum suits here, cuz' minimal means
numerically the least which is 1 activity, but i intended to

I think you can use "minimal number of activities" or "minimum activities".

"minimal" is usually a qualitative adjective,
meaning few, very little.
It can be used to describe either countable or
non-countable objects.
When used to describe a countable object, the exact
quantity of that object is not important, but the
sense that the quantity is few is important.
"He does minimal work." (non-countable work)
"He puts in minimal hours at work." (countable work hours)
Both sentences mean that he does not do a lot at work
(perhaps because he is lazy or not a good worker).
"minimum" is a quantitative adjective or noun,
meaning the least or the smallest in value.
More examples:
"He has minimal work experience in this field."
(He has very little or no significant work
experience in this field..)
"He does not meet the minimum age requirement
to apply for this job."
(All job candidates must be at least x years old.)
"He earns minimal pay."
"He earns the minimum wage."
(Can you tell the difference between these two now?)
Going back to the sentence that you wanted to say:
"We have a long list of activities. Let's keep the
number of activities to a minimum, and focus only on
the most interesting things to do."
You need to say "minimum NUMBER OF activities" here,
not "minimum activities".
